Recipes, Riso Scotti

Ingredients for 4 people:
• 1 tablespoon olive oil
• ½ onion finely chopped
• 1 cup rice for risotto “arborio”
• ½ cup dry white wine
• 4 cups of water with one Vegetable cube with reduced salt
• 1 cup strawberries cut into fours
• 1/4 cup anari cheese or parmesan cheese
• 1 tablespoon of low-fat margarine
• 2 tablespoons chopped parsley
• A little fresh ground pepper
Method:
• In a saucepan or deep frying pan with olive oil, lightly fry the onion
• Add the rice and continue on low heat to simmer
• Add the white, dry, good wine and let it slowly evaporate
• Add each few minutes of bit of hot vegetable broth every time it is absorbed and continue stirring
• Put the strawberries and continue to boil until the risotto is cooked but slightly crisp and moist
• Finally, add the anari cheese (dry anthotyro) and margarine
• Add fresh ground pepper, to taste and add the chopped parsley. Garnish with fresh strawberries
