Semolina Halva with Riso Scotti Almond Unsweetened

1 cup of light olive oil or seed oil or margarine
1 cup of semolina, coarse
1 cup of fine semolina
2 ½ cups sugar
2 cup water
2 cups Almond Drink Riso Scotti Almond Unsweetened
½ cup cleaned almonds coarsely ground
Zest from 1 lemon
Peel of 1 orange
½ cup raisins
1 cinnamon stick
1 tsp. cinnamon

In the small pot, boil the water and the almond drink, the sugar, cinnamon stick and orange peel and stir until the sugar melts well.
In the large saucepan and medium heat roast the semolina in the oil or margarine. Stir with a wooden spoon for 6-7 minutes until the semolina darkens. Add the raisins and cinnamon powder, take it off for a while and start adding the hot syrup with a deep ladle (caution because it will start to splash).
Then, after adding all the syrup, put the pot back onto the fire and stir until the halva mix doesn’t stick to the side of the pot anymore. Finally, add almonds and lemon zest. Remove and put the halva in a long or round form and leave it out of the refrigerator to set.
